Easy Corn Casserole

This sweet and creamy corn casserole is rich in flavor and filled with corn and cheese. It's hearty enough to be served as a main dish, but also great to serve as a side.

  • ½ cup butter melted
  • 1 box corn muffin mix 8.5 oz.
  • 1 can whole kernel corn undrained
  • 1 can cream style corn
  • 8oz. cheddar cheese shredded
  • ½ cup sour cream


  • Preheat the oven to 350°F
  • In a large baking dish, add the butter, corn muffin mix, corn, egg, and half of the shredded cheese.
  • Mix until combined.
  • Dollop the sour cream over the top and then use a knife to swirl throughout the mixture to combine.
  • Cover the top with the remaining shredded cheese.
  • Bake for about 40 minutes or until the middle is cooked through.
  • Serve while still warm.
