Easy Corn Casserole
This sweet and creamy corn casserole is rich in flavor and filled with corn and cheese. It's hearty enough to be served as a main dish, but also great to serve as a side.
- ½ cup butter melted
- 1 box corn muffin mix 8.5 oz.
- 1 can whole kernel corn undrained
- 1 can cream style corn
- 8oz. cheddar cheese shredded
- ½ cup sour cream
Preheat the oven to 350°F
In a large baking dish, add the butter, corn muffin mix, corn, egg, and half of the shredded cheese.
Mix until combined.
Dollop the sour cream over the top and then use a knife to swirl throughout the mixture to combine.
Cover the top with the remaining shredded cheese.
Bake for about 40 minutes or until the middle is cooked through.
Serve while still warm.
