Here’s an old-fashioned version of a sweet corn chowder recipe that is easy to make and delicious. It’s a one pot comfort classic.
My family loves soups and chowders. And I love to make them because they can be thrown into one big pot and left to simmer all day on the stove.
This sweet corn chowder recipe is a comfort classic my husband really loves. It’s filled with sweet corn and made the old-fashioned way with scalded milk and salt pork for flavor. But I’ve added my own improvements to this old-time favorite with a little smoked paprika and more potatoes to create an even heartier meal, too.
Scalded Milk (Super Easy Process)
If you’ve never used scalded milk, don’t let that scare you away from trying it for this dish. Scalded milk is just milk that’s been heated to almost boiling. Years ago, it was done to kill bacteria, but now that our milk is pasteurized, that’s not necessary. Instead, many still add scalded milk to enhance the flavors of the other ingredients and, since the heating changes its consistency, it works well for chowders for thickening without lumping and improves the density of other recipes, likes breads and cakes.

Salt Pork
I also use salt pork for this one. It’s a lot like bacon, but it’s much fattier and cheaper. Salt pork goes a long way and is the perfect ingredient for seasoning, so try adding some to other dishes, like beans and greens. You’ll be happy you tried it.

Sweet Corn Chowder Recipe
Here’s how I like to make mine.
Ingredients
3/4 cup diced salt pork
1/2 cup diced onion
1/2 cup diced green pepper
3 cups cubed potatoes, cooked
3 cans whole kernel corn, drained
3 cups scalded milk
1 teaspoon sugar
3 Tablespoons flour
1 Tablespoon water
2 egg yolks, beaten
2 Tablespoons butter, melted
sage
smoked paprika
salt and pepper
Directions
Brown the diced onions, peppers, and salt pork in a skillet. In a large soup kettle, add the browned ingredients, potatoes, corn, scalded milk, and thickening (made from the flour and water). Add a dash of sage and salt and pepper, to taste.
Bring to a boil then remove from the heat and blend in the melted butter and beaten egg yolks. Add a dash of smoked paprika to each serving. Enjoy!
