Easy Stuffed Bell Pepper Recipe : Here’s a super easy way to bake stuffed bell peppers. It’s loaded with ground beef, rice, and lots of cheese. A family favorite recipe you’ll love!
I’ve made stuffed bell peppers all sorts of ways, but I like this easy recipe best because it’s quick and easy to throw together and bake, and even better, it’s hands down the most delicious, too.
When choosing your peppers, make sure you get large ones that will stay upright in the baking dish. You can always prop them together as they bake, but once you serve them, it’s just easier for serving if they’ll stay upright on their own. Plus, they look nice when you can set the on the plate without worrying about them toppling over on everything else on you’re going to serve alongside.
I also like to choose a variety of colorful peppers for this one, too, but that’s because we love all the different flavors at our house. They all bake up nicely and really flavor all that wonderful meat and seasoned filling. This easy stuffed bell pepper is really a great one to serve guests because it makes such a beautiful presentation, but it’s one I like to serve on busy weeknights since it’s so easy to make and bake, too. Here’s how we like them at our house.
Easy Stuffed Bell Pepper Recipe
Ingredients
6 large bell peppers
2 lbs. lean ground beef
2 cups cooked brown rice
2 cans Manwich
1 1/2 cups shredded Mozarella cheese
salt and pepper, to taste
Directions
Preheat the oven to 350 degrees.
Remove the tops, core, and seeds from each bell pepper and arrange in a baking dish. Set aside.
In a large skillet, brown the ground beef until no longer pink, then drain.
Season with salt and pepper and mix in the Manwich and rice, heating through.
Stir in 1 cup of cheese until melted.
Spoon the ground beef mixture into each bell pepper, filling them completely.
Bake for 30 minutes.
Sprinkle each bell pepper with the remaining cheese and bake for just a couple more minutes until the top cheese is melted. Remove from the oven to cool for 5-7 minutes. Enjoy!
