Easy casseroles are always my go-to for major holidays and big celebrations. They make things way easier because you can go ahead and prep ahead of time, combine all those wonderful ingredients, then just bake and serve.

Easy Corn Casserole Recipe
This corn casserole recipe is one I like to use especially at Easter and other spring and summer celebrations. Of course, it’s a delicious side dish any time of the year, but for some reason, I tend to choose it during the spring and summer because of its bright yellow corn. Corn just says summer to me. Anyone else?
How to Make This Easy Corn Casserole
You may already have most of these ingredients since they are all basic staples, but here’s what you’ll need from your pantry and fridge or to pick up from the store:
- melted butter
- box of cornbread mix
- 1 can of whole kernel corn
- 1 can of cream style corn
- egg
- shredded cheddar cheese
- sour cream
I use Jiffy for my cornbread mix because it has such a sweet flavor and it’s super cheap, too!
It’s so easy to make this one! You pretty much just mix everything together, dollop with some sour cream and sprinkle with cheese. Just scroll down to the bottom and you can find a printable version that includes a step-by-step detailed recipe.
As with all of my casserole recipes, I like to use a glass baking dish. The one I used for this casserole was a 3qt. version so that it wasn’t too spread out in the pan. That way, I could really get a good scoop from the dish.
I also used my blue casserole dish because I thought it looked pretty against the yellows from the cornbread and corn. So if you’re going to serve this for a special celebration, you may want to go ahead and coordinate your dish with everything else. That way you can just set this on the table and it will serve as food and decoration as well. When in doubt, though, grab a clear dish or white – they go with everything.

Easy Corn Casserole
Ingredients
- ½ cup butter melted
- 1 box corn muffin mix 8.5 oz.
- 1 can whole kernel corn undrained
- 1 can cream style corn
- 8oz. cheddar cheese shredded
- ½ cup sour cream
Instructions
- Preheat the oven to 350°F
- In a large baking dish, add the butter, corn muffin mix, corn, egg, and half of the shredded cheese.
- Mix until combined.
- Dollop the sour cream over the top and then use a knife to swirl throughout the mixture to combine.
- Cover the top with the remaining shredded cheese.
- Bake for about 40 minutes or until the middle is cooked through.
- Serve while still warm.
