We try to keep fresh blueberries on hand at our house because they’re so good for you and taste delicious. They’re so easy to toss into other recipes, and we like to use them to make superfood and protein shakes in the morning for breakfast. It’s great way to start the day.
This dessert recipe, however, is more about the indulgence version. Yep. It’s a sweet treat that blends blueberries with fresh peaches, another one of our favorites. It’s filled with a wonderful blend of their warm juicy flavors and topped with a buttery crust. After the dessert is pulled from the oven and cooled a bit, we top each of our servings with a scoop of ice cream. The slightly melted ice cream over the warm fresh fruit creates one amazingly beautiful bite.
Here’s how I like to make mine.
Blueberry & Peaches Skillet Cobbler
Ingredients
7 to 8 medium fresh peaches, peeled and sliced
1 1/2 cups fresh blueberries
1/4 apple juice
2/3 cup plus 1 teaspoon sugar, divided
2 1/2 tablespoons cornstarch
1 teaspoon ground cinnamon
3/4 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
6 tablespoons cold unsalted butter, cubed
1/2 cup heavy whipping cream
vanilla ice cream
Directions
Preheat the oven to 375 degrees.
Combine peaches, blueberries, juice, 1/3 cup sugar, cornstarch, and cinnamon in a bowl and set aside.
In another bowl, whisk together 1/3 cup sugar with flour, baking powder and salt. Cut in the butter with a pastry blender or fork until crumbly. Stir in cream just until a dough forms.
Pour the fruit mixture into a 10 inch cast iron skillet and top with the dough.
Sprinkle remaining sugar over the top and bake for about 45 minutes until the fruit filling is bubbly and the top crust is golden brown. Serve each serving with a scoop of vanilla ice cream. Enjoy!
