Grilled Shrimp Recipes
We love grilled shrimp recipes at the Smith House. Well, we love all kinds of grilled seafood, but shrimp is certainly a favorite and, even better, it is one of the best seafood choices for cooking up something super easy and quick.
For this, however, I decided to dress it up a bit. I wanted a meal that was light enough to be served during the summer months, but still a meal that could be made into something a little heavier for my husband and our two boys who never seem to be full.
These grilled shrimp bowls are perfect. They are filled with fresh vegetables and grilled shrimp, and served in a crispy taco salad shell. So it’s wonderful for a summer meal on the patio. However, since you can pile in as many ingredients as your taco bowl can handle, it also can be loaded with more shrimp and vegetables to make it heartier, too.
Here’s how I like to make mine.
Grilled Shrimp Bowls
Ingredients
2 lbs shrimp, peeled and deveined
2 tablespoons olive oil
1 teaspoon of Old Bay seasoning
1 tablespoon of brown sugar
1 tablespoon of fresh lemon juice
1 teaspoon paprika
1/2 teaspoon of minced garlic
1/2 teaspoon of black pepper
4 crispy taco salad shells
shredded lettuce
sliced fresh avocado
sliced fresh tomatoes
shredded Mexican blend cheese
Ranch dressing
Directions
Mix first 7 ingredients in a small bowl until well blended. Add the shrimp to a resealable plastic bag, pour the mixture over the shrimp, and marinate for about 20 minutes or so in the refrigerator.
While the shrimp marinates, prepare the taco salad shells according to package directions. Once baked, set aside.
Heat grill to a high temperature and grill the marinated shrimp for 5 or 6 minutes until slightly charred.
Layer the salad shells with the fresh vegetables, grilled shrimp and top each serving with Ranch dressing and cheese. Enjoy!

The salad toppings, of course, are endless. I simply used what I already had on hand for this one and fresh vegetables I knew my family would love. But you could easily experiment with the different types of vegetables to layer in your grilled shrimp bowl. Or, you could even add a few extra grilled ideas, like grilled mushrooms or zucchini, which we love to add to just about every meal anyway.
The shrimp is a wonderful balance of flavor with just a hint of sweet from the brown sugar that really gives the shrimp sort of a sticky sweet texture after grilling, too. Add this one to your grilled shrimp recipes as a go-to for gatherings this summer with family and friends.
