Best Skillet Lasagna Recipe: Looking for an easy idea for dinner tonight? Try this Cheesy Skillet Lasagna recipe. It’s one of our family favorites that’s hearty and filling, and quick to make.

I love my cast iron skillet and I use it all the time to cook just about everything. My lasagna skillet recipe is one of our favorites. It’s the best skillet lasagna recipe ever because it’s easy to make and doesn’t even require any baking whatsoever. You make the entire thing over the stove.

Even better, it makes enough for leftovers. And since I our weeks are usually super busy, I like to make this one so I can take the following day off from cooking and just heat up the lasagna and serve a quick salad on the side. 

It doesn’t require the long drawn-out steps of making a traditional lasagna, but it takes just as wonderful. It’s filled with ground beef and tomatoes, and loaded with cheeses to create one fabulous dish. Here’s how I like to make mine.

Best Skillet Lasagna Recipe

Ingredients

1 pound ground beef
2 garlic cloves, minced
1 can diced tomatoes with basil, oregano and garlic, undrained
2 jars (14 oz. each) spaghetti sauce
1 can cream of onion soup, undiluted
2 eggs, lightly beaten
1 1/2 cups cottage cheese
3/4 teaspoon Italian seasoning
1 box no-bake- lasagna noodles
1/2 cup shredded Colby Jack cheese
1 cup shredded mozzarella cheese

Directions

1. In a large skillet, brown ground beef with garlic and drain when no longer pink.
2. Add tomatoes and sauce, and heat through.
3. Set aside the ground beef mixture in a large bowl.
4. In a bowl, mix together the eggs, soup, cottage cheese, and Italian seasoning.
5. Spread a cup of the meat mixture evenly to bottom of the skillet.
6. Layer with a cup of cottage cheese mixture and noodles.(break the noodles to fit)
7. Repeat layers and top with remaining sauce.
8. Bring to a boil, reduce heat, then cover and simmer for about 20 minutes or until the noodles are tender.
9. Remove from heat and sprinkle with shredded cheeses.
10. Cover for a couple of minutes to allow cheese to melt.
