Here’s a sheet pan dinner recipe with roasted vegetables and sausage. It’s an all-in-one meal idea for busy weeknights that is easy to make and delicious, too.
I love roasted vegetables. It’s just so easy to throw them in the oven to let them roast a bit while cooking up whatever else you’re planning to serve. However, for this recipe, I’ve made cooking and cleanup even easier. You simply toss the vegetables in olive oil, season with salt and pepper, spread them out on a large baking sheet, and top with a few links of your favorite sausage for a one sheet pan dinner that tastes wonderful.
There are all sorts of ways to create sheep pan dinners. In fact, I made up this one as I shopped in the produce section. I was in the mood for green beans and potatoes, and so I grabbed those vegetables and added just a few other things to create the dish.
I also went with a smoked bratwurst for the sausage because it’s what I had available, but you can easily use another type of sausage link. It’s up to you and what you think your family would enjoy at the moment. For us, we like changing it up, so I usually just grab whatever’s easiest or what’s on sale.
Here’s how I made this one.
Sheet Pan Dinner: Sausage with Roasted Vegetables
Ingredients
3 Tbs. olive oil
1 lb. snipped green beans
1 lb. red potatoes, quartered
1 cup fresh mushrooms, sliced
6 Smoked Bratwurst links
1 tsp. snipped fresh rosemary
Salt and pepper to taste
Directions
Preheat the oven to 400 degrees.
Toss the vegetables in olive oil and salt and pepper to taste.
Spread the vegetables in one layer on a large baking sheet.
Prick the sausage links with a fork a couple of times and place on the pan with the vegetables.
Sprinkle with rosemary and roast for 30 minutes until potatoes are tender and slightly browned.
