Easy casseroles: This is the most delicious stuffed ravioli lasagna. It’s layered with frozen ravioli, a hearty amount of ground beef and peppers, and covered in cheese.
I totally made this easy casserole recipe from what we had in the pantry and freezer. And, let me just say, that it’s one of the most delicious quick and easy recipes I’ve ever created. Using some of my all-time favorite go-to staples, I simply layered a 9 x 13 casserole dish and covered everything with cheese. That’s how the double stuffed ravioli lasagna was created. And I have a feeling, it’s going to be a family favorite for a very long time.
Knowing what I do about what my boys like to eat for supper, I knew as I was throwing it together, they were going to love it. I call it double stuffed because it takes my everyday ravioli casserole to a much heartier level. It’s loaded with ground beef and bell peppers so that it’s piled high with extra flavor and goodness. Then I added another layer of frozen cheese raviolis and a little extra sauce.
The layered raviolis create lasagna-style layers throughout the dish holding everything together, but the double stuffing of ground beef and green peppers makes it a crowd pleaser that would be absolutely perfect to serve at a potluck supper or when you want to bake today and have leftovers for later. Just serve this one with warm dinner rolls or your favorite bread. Here’s how I made this one.
Double Stuffed Ravioli Lasagna
Ingredients
1 medium onion, chopped
1 medium bell pepper, chopped
2 pounds ground beef
2 jars of marinara sauce
2 pounds of frozen cheese ravioli
1 can of cream of mushroom soup mixed with 1 can of water
2 cups of shredded Italian blend cheese
2 Tablespoons of grated Parmesan cheese
Directions
Preheat the oven to 400 degrees.
Spread a small amount of marinara sauce in the bottom of a 9 x 13 baking dish and set aside.
Brown ground beef with onions and peppers until ground beef is no longer pink. Drain.
Reserving 1/2 cup of the marinara sauce, mix the rest of the two jars of sauce in ground beef mixture.
Add a layer of cheese ravioli to the baking dish then cover with half of the ground beef mixture.
Cover with the diluted mushroom soup mixture.
Repeat with another layer of cheese ravioli and the rest of the ground beef.
Add one last layer of cheese ravioli and top with the reserved marinara sauce.
Sprinkle with the cheese, cover with foil, and bake for 40 minutes until heated through.
Uncover and bake for another 15 minutes until bubbly. Enjoy!
