Strawberry Cookie Cups

We love a sweet treat after dinner. And even better, a tasty dessert after dinner that doesn’t take a long time to whip up or bake. That’s why cookie cups recipes are one of our favorites. They’re super easy to assemble, and require only a few ingredients to make them. In fact, these Strawberry Cookie Cups require only 2 ingredients. You can’t get any easier than that!

Strawberry Cookie Cups

For these cookie cups, it’s all about the strawberry. That’s why I used a sugar cookie base to complement its sweetness. And the result was, well, one delicious idea for the perfect strawberry delight.

They make a wonderful display on a platter and would be a delicious idea to include at any party, baby shower, or just as a sweet treat this spring.

Even better, they don’t require a lot of prep time. And, by using refrigerated cookie dough, the kitchen mess is minimal and the baking is super quick.

Ingredients – ONLY 2 ARE NEEDED FOR THIS ONE!

1 package of refrigerated sugar cookie dough
1 tub of strawberry icing

Directions

Preheat oven to 350 degrees and lightly grease a 24 miniature muffin cup pan.
Scoop about a tablespoon of cookie dough into each cup.
Then, press and mold the cookie dough to form cups.
Bake for about 8 to 10 minutes until lightly browned.
Cool completely in pan on wire rack. This will allow the center of each cookie cup to drop and will help them firm to prevent sticking or crumbling when you remove them.
Using the end of a butter knife, carefully remove the cookie cups and spoon in the strawberry icing.
I simply use a disposable decorating bags with an icing tip. It makes the process super easy and your strawberry cookies cups look beautiful, too.
