Who doesn’t love an easy chicken casserole? That’s why I’m always experimenting with flavors and trying new ways to serve up chicken. I try all kinds of recipes and then I tweak them to satisfy my family’s taste and preferences.
The best recipes, the ones I think are the real winners, are those please the crowd, but at the same time, are super easy to throw together. And that’s what this one turned out to be.
Since my boys love Mexican recipes, I keep a lot of taco seasoning and other Tex Mex ingredients in the pantry. That way, I can toss in a few of these to spice up any dinner. I’ve saved many a busy weeknight using a can of salsa and sour cream.
So that’s how I came to make this twist of a Chile con queso chicken dish. It happened quite by accident, but ended up being a hit at the house. So I thought I would share it in case you wanted to add another casserole to your recipe favorites.

Chile Con Queso Chicken Casserole
This chile con queso chicken casserole is a one-dish meal perfect for busy week nights. It’s an easy chicken dinner that’s filled with chicken, salsa, green chilies, and cheese.
Here is how I like to make mine.
Ingredients
vegetable oil
4 large boneless skinless chicken breast, halved
1 packet of taco seasoning mix
1 jar of salsa con queso
1 can of green chilies
1 cup Mexican cheese blend, shredded
3/4 cup half-and-half
chopped tomatoes
chopped green onions
Directions
Preheat oven to 350 degrees and spray a medium size baking dish with cooking spray then heat about a tablespoon of vegetable oil in a large skillet over medium heat. Toss the chicken in the taco seasoning and cook it in the skillet for 6 to 8 minutes until lightly browned on each side.
In a large bowl, combine the queso, chilies, cheese, and half-and-half until well blended. Pour a small amount of the queso mixture into the bottom of the baking dish. You don’t need much. Just add enough to slightly cover the bottom.
Next, add a layer of the chicken. Then pour the rest of the queso mixture of the top of the chicken and cover with foil. Bake the casserole for 20 minutes.
Uncover and bake for 15 minutes longer, or until the juice from the chicken is clear. Sprinkle with chopped tomatoes, and green onions. I had some crumbled bacon, so I tossed that on top of the chicken, too.
We like to serve this chicken casserole over white rice. Enjoy!
