Easy Layered Taco Salad Recipe : Who doesn’t love a great taco salad? This one is layered with all those Tex Mex favorites and topped with sour cream and loads of cheese.
We usually have at least one Tex Mex meal a week at our house because the boys love it and I love that they’re so easy to throw together. This time, though, I thought I would change it up a bit. At the last minute, I simply threw all those wonderful Mexican flavors we love in one bowl and served it. And I’m happy to report back that it was a great one.
I think this would be a wonderful idea for a potluck or even some sort of spring or summer party because everything can be carried in just one bowl and served alongside another bowl of your favorite chips and salsa. You could even add the salsa to the layered taco salad, but since the boys like the restaurant style, I decided to keep that one as a side addition. Still, it could easily be adjusted to what your family enjoys most and even what you already have in the fridge and pantry. Don’t be afraid to experiment with this one. Just layer your favorites and serve. Here’s how I made this one.

Easy Layered Taco Salad Recipe
Ingredients
2 lbs. lean ground beef
2 packets of Taco seasoning mix
2 cans refried beans
2 cans yellow corn, drained
2 cups Romaine lettuce, chopped
1 small can sliced black olives, drained
1 cup cherry tomatoes, sliced
3- 4 green onions, sliced
1 cup Mexican style cheese, shredded
1 cup sour cream
optional: Tortilla chips and salsa
Directions
Brown ground beef until no longer pink and drain.
Blend in taco seasonings with 1 1/2 cup water and bring to a boil, then simmer.
Heat the refried beans until softened and spreadable.
Layer the trifle or large serving bowl with ground beef mixture and then a layer of the warmed refried beans.
Add a layer of corn and then the lettuce.
Top with a sprinkling of tomatoes, black olives, onions, and shredded cheese.
Serve with a dollop of sour cream. Enjoy!
