I love a good casserole. The ones I make most often are all comfort food type meals that are hearty, delicious, and perfect for feeding my boys who are always hungry. Plus, casseroles are super easy to throw together and cook up in just one pan. Which, of course, means less prep and cleaning time in the kitchen. That’s why I like to make them often during the week when we all seem to be going in different directions.
This cheesy ham hash brown casserole recipe is a creamy family favorite that’s filled with lots of cheddar cheese. If you’re looking for a quick toss in the oven dinner idea, then this one will be your new favorite find.
This cheesy hash brown casserole is one of our favorites. It’s loaded with lots of chopped ham, potatoes, and cheddar cheese. Yes, it’s the perfect comfort food when after school and work when everyone acts as if they’re starving.
And since it’s loaded with ham and hash brown, it’s super filling, so it’s really a great one to make if you want leftovers, too. Just heat up the next day with a sandwich and your next meal is already planned.

Although I originally made it as a breakfast casserole, I usually serve this recipe as a main dish at dinner. There have also been times I’ve made it for big gatherings and even as a hearty side.
It’s a perfect dish for those nights when you’re in a hurry to toss something in the oven. Even better, it’s extra cheesy! So if your family loves cheese like mine, they’ll love this one every time you make it.

Ingredients
- 30 oz. package frozen shredded hash browns
- 8 oz. sour cream
- 2 cans cream of chicken, undiluted
- 1/2 cup butter, melted
- 1 lb. cubed ham
- 2 cups of shredded cheddar cheese (reserved 1/2 cup)
Directions
It’s so easy to throw this casserole together. Just mix all the ingredients together and place it all in a lightly greased baking dish. I then sprinkle the rest of the cheese on top and bake it at 350 degrees for about an hour.
We LOVE this casserole. It’s filled with all that cheesiness and it’s so wonderful to dip into when it’s warm. Delicious! It goes great with a biscuit, too. Enjoy!
