I love to keep some sort of dessert or sweet treat on hand for us to enjoy after dinner. We actually eat supper quite early at our house, so I like to clear the table and clean the kitchen after dinner, then make a pot of coffee and serve up a little something sweet a little while later. That’s why I love easy quick dessert recipe ideas that I can whip up with just a few ingredients and serve.
These key lime cookie cups are just the right size for an after dinner treat. They’re super easy to make and taste just like a delicious bite size version of homemade key lime pie.
Key Lime Cookie Cups
Ingredients
1 tube refrigerated sugar cookie dough
3 egg yolks
1/2 cup of fresh key lime juice
1 (14oz.) can sweetened condensed milk
1 tsp. vanilla extract
1 can refrigerated whipped cream topping
Directions
Preheat the oven to 350 degrees.
Place about a teaspoon size ball of cookie dough into each cup of a 24-cup mini muffin pan.
Bake for 8 – 10 minutes until golden brown.
As soon as you remove them from the oven, gently press in the center of each cookie to form each cup.
Cool the cookie cups for a few minutes in the muffin pan then cool completely on a cooling rack.
To make the key lime filling:
For the filling, whisk together the egg yolks, key lime juice, sweetened condensed milk, and vanilla over medium heat for about 15 minutes until warmed throughout.
Remove from the heat and set aside to cool completely.
Fill each cookie cup with key lime filling and top with a dollop of whipped cream. Enjoy!
