This super easy Meatballs with Mashed Potatoes recipe is sure to be a family favorite. It’s a comfort food classic that’s perfect to serve any day of the week! An easy recipe everyone will love.

Super Easy Meatballs with Mashed Potatoes recipe

 

Last week, I was looking for an easy meal to serve for dinner that would be hearty enough to satisfy the boys, but easy enough for me to throw together. I created the perfect comfort food classic recipe. It’s super easy because you throw it in the slow cooker. And it’s versatile, too, because you can serve the meatballs and gravy over mashed potatoes, rice, or your family’s favorite pasta variety.

I chose mashed potatoes for this one and my family was super impressed by it. But it you want to cut out the peeling of potatoes, just grab a box of pasta noodles. I’m sure that would be just as tasty, too.

Meatballs with Mashed Potatoes

Here’s how I made this one.

Ingredients

2 lbs. frozen meatballs

2 cans cream of mushroom soup

1 packet of onion soup mix

(optional: sautéed onions and mushrooms for topping)

Directions

1. Place the frozen meatballs in a slow cooker.

2. In a medium bowl, mix together the cans of soup and packet of onion soup mix with one cup of water.

3. Pour the soup mixture over the meatballs and cook on low for 4 to 6 hours, or 2 to 3 hours on high.

4. Serve on top of mashed potatoes, rice, or your family’s favorite pasta. Enjoy!

My boys devoured this one and was super easy to throw together. I even topped each serving with a few sautéed onions and mushrooms, but again, that’s just if you have enough time for it. The rich gravy and slow cooked meatballs are hearty and flavorful enough on their own.
