Sheet Pan Salmon Recipe : Try this delicious salmon and vegetables dinner tossed in seasonings and roasted on one pan. It’s boosting with flavor!
I love easy recipes that can be baked all together in just one casserole dish or on a sheet pan. Since our family loves grilled salmon, I thought I’d make a sheet pan dinner featuring our favorite fish. The flavors of this one blended nicely and the vegetables created the perfect meal that all of us enjoyed, too.
The great thing about one sheet pan recipes, is that they’re so easy to adjust to your family’s preferences. Just choose the protein and vegetable combination your family enjoys together, add a little seasoning, and roast it all together.
When roasting everything together, make sure to use a large sheet pan and spread everything out evenly to brown. I also like to broil mine for a couple of minutes, too, since we like our vegetables charred a bit. Here’s how I like to make mine.
Sheet Pan Salmon Recipe
Ingredients
4 skinless salmon fillets
2 Tbsp. olive oil
1 1/2 tsp. dried basil
1/4 tsp. salt
1/8 tsp. black pepper
1/2 lb. fresh mushrooms, sliced
1 onion, thinly sliced
1 lb. green beans, trimmed
1 cup cherry tomatoes, halved
fresh parsley
1 lemon
Directions
Preheat the oven to 400 degrees.
Spray a large sheet pan with cooking spray and set aside.
In a small bowl, mix together the olive oil, basil, salt, and pepper.
Place the salmon on baking sheet and drizzle a little bit of the oil mixture across the top of each piece of fish.
Toss the green beans, mushrooms, tomatoes, and onion in the rest of the oil mixture.
Spread the seasoned vegetables evenly on the baking sheet.
Bake for 20 – 23 minutes until salmon flakes. Broil for 2 minutes to char the vegetables, if desired.
Garnish with lemon juice and parsley. Enjoy!
