Baked Bean Casserole
We have always had baked beans as a side dish for all of our potlucks, parties, and picnics during the spring and summertime. I guess it was just one of those things that was easy to add to a meal when we were grilling out or having family and friends over because it was so simple to throw together. I mean, all you did was pretty much pop open a couple of cans of pork and beans, warm them on the stove, and pour them over into a pretty dish or bowl. It doesn’t get any easier.
Over the years, I remember Mama adding a few more things to make the baked beans taste just that much better, though. Sometimes, she would sauté a little chopped onion and bell pepper then add the beans. That was always delicious–everything tastes better with sautéed onions and peppers–especially after smelling it cooking in the kitchen. Other times she would simply mix in a little bbq sauce and bake it.

Whatever she did with the cans of pork and beans was delicious, and so some sort of baked bean recipe has always been on our menu for picnics and summertime grilling.
That’s why I’m sharing pretty much a combination of all of these ingredients, plus a few extras, to make your own baked bean casserole.
It’s super easy because it still starts with a couple of cans of basic pork and beans. You just need a few more ingredients to season it up a bit. And I’ve even added a pound of ground beef to make it a heartier meal that can be served on its own.
So it can be served as a delicious crowd-pleasing side at your next gathering, or you can serve it as a meal with a slice a cornbread or biscuit.

Baked Bean Casserole Recipe
First, in a skillet, fry up a few slices of bacon until nicely browned and crispy. Leaving the drippings in the pan, remove the bacon and let cool on a paper towel. Then crumble and set aside.
In the skillet, brown ground beef onion and bell pepper and then drain. Add the salt, pepper, bbq sauce and beans. Pour into 1 1/2 quart casserole dish. Bake at 350 degrees. for 30 minutes.
Sprinkle with cheese and crumbled bacon, and bake for another 5 minutes or until cheese is melted. Serve.

Baked Bean Casserole
Ingredients
- ½ cup bacon, cooked and crumbled
- 1 lb. ground beef
- ½ cup chopped onion
- ½ cup chopped bell pepper
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup bbq sauce
- 2 cans pork and beans
- 1 cup shredded cheddar cheese
Instructions
- Brown ground beef, onion, and bell pepper. Drain
- Add the salt, pepper, bbq sauce and beans.
- Pour into 1 ½ quart casserole dish.
