This quick and easy recipe for Baked Tortellini Casserole is loaded with flavor and filled with mozzarella cheese. It’s an easy delicious dish all in one pan!

My boys love every dish that’s cheesy. And they love any variety of pasta, too, so that’s why this one was a favorite. I love that it’s super easy. And I also love that I can prep and bake it entirely, from start to finish, in just one baking dish or in my case, a skillet pan.

That’s why I use my dutch oven for this one. I can sauté the onions and brown the ground beef. Then mix everything else together and pop it in the oven to bake. 

In fact, I use my dutch oven and cast iron skillet for lots of my casseroles and other dishes. I use my cast iron skillet almost every day! Here are a few other skillet recipes if you’re interested or great casserole dish recipes your family will love!

Baked Tortellini Casserole

This one is really the perfect meal for busy families. And right now, we are super busy at the Smith House. So it’s nice to have these quick and easy recipes we can pull together with the cooking time taking way less than an hour because there isn’t much prep time at all. This one only takes 30 minutes to bake. Oh! And I love that it’s great for leftovers, too! Make sure to add this one to your list of easy dinner recipes this week!

I usually keep these ingredients stocked in my kitchen for this one because my family really likes it. Plus, I can actually use most of these ingredients if I want to make some of my other favorite go-to meals, too.

What does tortellini go well with? 

I toss this tortellini recipe together and serve it with a side salad and maybe buttery breadsticks or some garlic bread.

**There’s no need to boil the tortellini with this recipe because you’re going to bake it all together.

You may already have these ingredients in your pantry and fridge:

Ingredients

2 Tablespoons olive oil

small onion, chopped

1 pound ground beef

1 jar of spaghetti sauce*

1 can of diced tomatoes

20 oz. pack of fresh cheese tortellini** (or frozen tortellini, just thaw ahead)

3 cups of shredded mozzarella cheese

salt and pepper to taste

Here is how I like to make this one:

Instructions

Preheat oven to 350 degrees.

Sauté onions in olive oil, then add ground beef and brown.

Drain ground beef and mix in the spaghetti sauce, tomatoes, and a little salt and pepper to taste.

Stir in the tortellini and about half of the mozzarella.

Sprinkle the remaining cheese to cover the top. 

Cover with foil and bake in the oven for 30 minutes.

Enjoy!

*My family loves the Ragu Super Chunky Mushroom spaghetti sauce. So if I mention spaghetti sauce in my recipes, it’s this one unless otherwise mentioned.

**For this recipe, I used the three cheese tortellini. Although I’m sure other varieties would taste great, too. Basically, I go for what’s on sale! You can also sprinkle whatever garnishes, like  with a little fresh basil, parsley, or your favorite fresh herbs for a little extra on top, too.

The variations for this baked tortellini recipe is endless! Add a little parmesan cheese, or, some may prefer to use Italian sausage or meat sauce, but for the boys, this works great and it’s way cheaper, too.

And you can easily keep these leftovers in the refrigerator and reheat in the microwave the next day.

    Do you cook the tortellini before hand, or should it cook up in the oven?

      I use fresh tortellini and it just cooks up in the oven, so if you use frozen you may want to bake it a little longer. 🙂
