Just don’t choose a bread that’s too thickly sliced, either. That way your sandwich is evenly divided between the amount of bread and the filling. It will also have a better chance to heat through when you use a regular slice of thin bread.

2 slices of sourdough bread
2 Tablespoons pimento cheese (homemade or store bought)
1 Tablespoon mayonnaise
2 -3 slices of a large fresh tomato
Heat a small pan over medium heat.
Spread a generous amount of mayonnaise on one side of a slice of bread and place, mayo-side down in pan.
Spread a thick layer of pimento cheese to cover the area over the top of the bread.
Add 2- 3 slices of tomato on top of the pimento cheese.
Spread another layer of pimento cheese on another slice of bread and place on top to make the sandwich.
Spread another generous amount of mayonnaise on top of the sandwich and flip to brown the other side. Enjoy!
