As a busy mom, I’m always on the lookout for easy recipes for dinner. I want something hearty enough to satisfy my hungry boys, but something that doesn’t take too long slaving over the stove.

Creamed Spinach Tortellini

This tortellini recipe is one that fits the plate!

It’s created with frozen tortellini, so it doesn’t take too long to create. And it’s delicious, which makes it a winner at the Smith House, with wonderful flavors mingled together to make this one a comfort food classic.

I also like the idea of sneaking in a little spinach, too.

Strangely enough, my boys love turnip greens. Seriously, when they ask about dinner and I tell them we’re having turnip greens, they love it. I know, it’s really strange.

They love their turnips. But spinach, well, not so much. They’ll eat it. But it’s not the same love affair as the turnip greens.

This dish offers spinach in a much more creamier–and cheesier–version.

Creamed Spinach Tortellini

It’s a wonderful one dish wonder that makes a great choice for leftovers, too, so I like to double the recipe. We serve our Creamed Spinach Tortellini with baked bread, but it really doesn’t need anything else because it’s super delicious and satisfying just served on its own.

I also use my cast iron dutch oven for this one. It’s deep enough to hold all those rich flavors and keeps the creamed spinach and tortellini warmed perfectly when covered and set on a low setting on the stove.

Creamed Spinach Tortellini

Ingredients
  1. 1 (16 oz.) package frozen cheese tortellini
  2. 1 small onion, chopped
  3. 2 tablespoons olive oil
  4. 1 garlic clove, minced
  5. 1 can diced tomatoes with basil, garlic, and oregano, undrained
  6. 1 (10 oz.) package frozen chopped spinach, thawed and dried
  7. 1 1/2 cups heavy whipping cream
  8. 1/2 cup grated Parmesan cheese
  9. salt and pepper to taste
Instructions
  1. Cook frozen tortellini according to package directions.
  2. In a large pan, saute onion in olive oil until tender. Then add garlic, spinach, and tomatoes.
  3. Sprinkle with salt and pepper to taste.
  4. Cook over medium heat for a couple of minutes until liquid is absorbed.
  5. Stir in the whipping cream and cheese and bring to a boil.
  6. Reduce heat and simmer, uncovered, about 10 minutes or until the cream sauce is thickened.
  7. Drain tortellini and mix into the creamed spinach.
  8. Sprinkle each serving with extra Parmesan cheese.
