Easy Mexican Pasta Salad : You’ll love this quick and easy taco pasta salad recipe. It’s easy to toss together and serve on busy weeknights. A potluck favorite your whole family will love!
This past week my husband and I had several projects we wanted to tackle around the house, so I decided to stick to a few of my go-to meal ideas to keep us fed. One day I made a big bowl of this easy Mexican pasta salad so everyone could just grab a bowl on their own or make a sandwich and eat a little of the taco pasta salad as a side.

It’s really a great recipe to make ahead when you’re planning a busy week or when you’re looking for something quick and easy to throw together for a family gathering or a potluck meal. Just toss together the ingredients and store it in the fridge until you’re ready to serve. You can adjust the vegetables to suit your family’s preferences. I usually just chop up fresh vegetables I’m in the mood for or whatever we already have on hand.

Easy Mexican Pasta Salad
Ingredients
1 package (16 ounces) spiral pasta
1 large green pepper, chopped
1 large red pepper, chopped
3 green onions, chopped
2 cups cherry tomatoes, halved
1 small can sliced black olives, rinsed and drained
1 can red kidney beans, rinsed and drained
2 cups shredded cheddar cheese
1 envelop taco seasoning
1 cup ranch dressing
Directions
Cook pasta according to the package directions, then rinse in cold water and drain.
In a large bowl, mix together pasta with tomatoes, peppers, olives, onions, beans, and cheddar cheese.
Add the taco seasoning and dressing and toss to coat. Enjoy!
