How to cook salmon on BBQ grill : Here’s an easy salmon recipe using mayonnaise and seasoned salt. Just grill it in a cast iron skillet to create a perfectly crispy skin. Easy and delicious!

Looking for a new way to serve fish to your family each week? Here’s an easy salmon recipe that only requires a couple of ingredients and is super easy and quick to make.

We love fish at the Smith House. We love it deep fried, grilled, and even wrapped up raw on a sushi platter. All of us love it, so since fish is a great source of omega-3 fatty acids and a great choice to eat a couple of times a week, I try to include fish in our meal plan as much as possible. And, even though we love it deep fried, I try to limit the fried varieties and oven bake or grill the fish instead.

To me, one of the easiest ways to add fish to our diets, is with salmon. Salmon has a great flavor on its own, so it doesn’t need much seasoning. You simply add it to a seasoned cast iron skillet and grill it until the skin is nice and crispy. The key is really the crispy skin. It’s all about getting the pan hot enough without burning the fish, but locking in the flavor and cooking the skin quick enough to create the crispness. That’s why a cast iron skillet is perfect for grilling salmon, or any fish for that matter. The cast iron heats up quickly and stays hot, so it’s perfect for even cooking. That’s why I use mine often–just about every day. I even make a stovetop lasagna with it, too!

Ingredients

2-3 lbs. of salmon

1 cup of Duke’s mayonnaise

seasoning salt

pepper

Directions

  1. Season the salmon with a good sprinkle of seasoned salt and pepper.
  2. Brush the mayonnaise over each side of the salmon to create a good coating on each side.
  3. Heat your skillet on the grill and add a little oil to the bottom of the pan.
  4. Once the skillet is good and hot, add your salmon with the skin side up and cook for about 3 minutes.
  5. Then, gently flip over the salmon and cook for another 5 or 6 minutes, until the skin is nice and crisp. 

Just a note about this easy salmon recipe: I’m a Duke’s mayonnaise girl. Where I come from, there isn’t any other mayonnaise. That’s why I specified Duke’s in the ingredients. Seriously, if you’ve never had Duke’s mayo you are missing out on one of the greatest creations that ever came from the South. I believe the Duke’s mayonnaise is the key to this recipe. It doesn’t have sugar in it and it does taste entirely different that those other varieties claiming to be mayonnaise.
