Slow Cooker Vegetarian Chili Mac : Here’s a delicious and hearty recipe for your crockpot. It’s filled with flavor and so easy to make. Just throw it in the crockpot on busy weeknights. Yum!

Slow Cooker Vegetarian Chili Mac

I love making a big bowl of chili for the boys at our house. Well, I’m actually a huge fan of most soups, stews, and chili recipes. To me, there is nothing that says welcome home comfort food like a good bowl of hot soup or stew.

Now that the weather has dropped and we are pulling on our sweaters and coats, I thought it was time to pull out some of my favorite soup and chili recipes. That way, I could make a big pot for the boys to warm up to when they came home and, even better, it would last a couple of days so I wouldn’t need to cook for a awhile. So I pulled out my Crockpot and started with this crowd pleasing recipe.

It is actually a vegetarian version, but you would never miss the meat. The pasta and beans make it super hearty and even though my boys are big meat eaters, they’ve never noticed that it’s all vegetarian. So if you’re trying to cut back on your meat intake or looking for a budget friendly recipe, this one will do it.

I like to serve our chili mac with skillet cornbread, grilled cheese sandwiches, or even with Frito Scoops when I’m super busy and need something quick as a side.

Here is how I like to make mine.

Ingredients

1 medium onion, chopped

1 bell pepper, chopped

15 oz. pinto beans, rinsed and drained

15 oz. kidney beans, rinsed and drained

28 oz. can crushed tomatoes

1 packet of chili mix

1/2 teaspoon salt

1/8 teaspoon black pepper

4 cups vegetable broth

16 oz. elbow macaroni pasta

1 1/2 cups Colby Jack cheese

Optional toppings:

top each serving with chopped green onions and a dollop of sour cream

Directions

  1. Place all the ingredients except for the macaroni, cheese, and toppings in slow cooker. Stir, cover, and cook on high for 4 hours or low for 6-8 hours.
  2. Stir in the macaroni pasta and cook on high for 15 to 20 minutes until the pasta is cooked. 
  3. Stir in the cheese.
  4. Top each serving with chopped green onions and a dollop of sour cream.
